This application seeks to permit polygalacturonase from a genetically modified strain of Aspergillus oryzae containing the polygalacturonase gene from Aspergillus tubingensis, as a processing aid in the manufacture of fruit and vegetable juices/products, coffee processing, flavouring production, and wine production.
